Domaine Mada

Domaine Mada began as the project of Édouard Adam. Originally from Tunisia, Édouard moved to France to study winemaking and produced his first vintage in 2016 in the town of Gignac, in the Languedoc. When we first visited, the wines were made in the garage of his wife’s mother’s restaurant, a humble beginning that reflected both necessity and determination.
Since then, much has changed. Pauline has joined the project, and the family has moved to the village of Nizas, where their home, cellar, two children, and surrounding vines now sit together. With the move has come a quiet transformation. Over the past six years, the wines have grown and settled into themselves. The cuvées have evolved, the vineyard holdings have expanded, and the style has matured into something defined by balance and ease of drinking.
In the vineyard, the approach is clear. There is no tilling, and permanent cover crops are maintained to protect the soils from the intense southern sun. The work is guided by respect for living systems, not an effort to dominate nature but to support it, and at times to allow a certain wildness to remain. Grapes are harvested at full ripeness, yet the farming naturally leads to lower alcohol levels.
In the cellar, the same clarity prevails. Extractions are gentle, often using whole clusters. Wines are aged in barrel, never topped and never with the addition of sulphur. Reds are sometimes pressed directly, whites may undergo maceration, and on occasion the two are blended together. The boundaries are fluid, guided more by intuition than by category.
Though the domaine remains young, its direction feels assured. Domaine Mada is building toward longevity, allowing both the wines and the project itself to deepen with time.
